Tapas – Baked Tomatoes

Ingredients for 4 servings:

  • 600 g vine tomatoes, large, red
  • Sea salt
  • Pepper, colored or black from the mill
  • 3 sprigs rosemary
  • 1 clove(s) garlic
  • 50g Manchego
  • 5 tbsp breadcrumbs
  • 5 tbsp olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Preheat the oven to 200°C (180°C fan/convection oven). Trim and rinse the vine tomatoes, pat dry, cut into slightly thicker slices, and place them on a baking sheet lined with baking paper. Season with a pinch of sea salt and a few grinds of mixed or black pepper. Rinse the rosemary, shake dry, and finely chop the needles. Peel and finely chop the garlic clove. Coarsely grate the Manchego cheese. Mix the breadcrumbs with the cheese, rosemary, and garlic and spread over the tomato slices. Drizzle with olive oil and bake in the preheated oven for about 20 minutes.
