Ingredients for 12 servings:
- 4 m.-sized eggs
- 6 tbsp wheat flour
- 4 tbsp tapioca flour
- 1 pinch of salt
- 1 tsp turmeric powder
- 20 g baking powder
- 30 g whole milk
- 2 m.-large shiitake mushroom(s), dried
- 40 g carrot(s), grated
- 80 g broccoli florets, fresh
- 3 peppers, red or red bell peppers
- 1 m.-large onion(s), brown
- 3 medium-sized garlic cloves
- 2 small chili peppers, green
- 1 tbsp sugar
- 1 tsp instant chicken broth
- 1 tsp, levelled black pepper from the mill
- 1 pinch of mace or nutmeg
- 4 tbsp oil
- 1 tbsp wheat flour
- n. B. Salt and pepper to taste
- n. B. Flowers and leaves for garnishing

Spicy broccoli tart Pandang style. Recipe from Sumatra, Indonesia, for a 24 cm springform pan
All ingredients should be at room temperature. Prepare the filling ingredients first, cutting them to the size of a hazelnut. Pour hot water over the shiitake mushrooms and let them soften for about 30 minutes. Squeeze out the water, chop the caps, and discard the tough stems. Grate the carrot, deseed the chilies, and slice them crosswise into fine rings. Split the peppers lengthwise, deseed them, and slice them crosswise into approximately 1 cm pieces. Roast the onion pieces in cooking oil until light brown. Mix all the chopped ingredients, from the mushrooms to the chilies, thoroughly. Season, don’t forget the sugar, and dust with the flour. Preheat the oven to 170°C (top/bottom heat). Moisten a springform pan and line it with baking paper. Mix the flour, salt, baking powder, and turmeric powder well. Beat the eggs and mix them with the flour until smooth, then carefully fold in the filling. Don’t overmix! Pour into the springform pan and smooth it out. Place the pan on the middle rack of the oven. Bake for about 30 minutes. The tart tastes best warm. Note: Pandang restaurants don’t have a menu. All available dishes are served in portions on a Christmas-tree-shaped wooden stand in front of you. You take what you want and only pay for that. For example, if there are three chicken thighs in a bowl and you only eat one, you only pay for that one. In this sense, a tart can be an appetizer, main course, or dessert—whatever you prefer.
