Ingredients for 2 servings:

  • 100 g flour
  • 40 ml water
  • ½ tsp salt
  • 1 tbsp olive oil
  • 100 g goat cheese (roll)
  • 2 tbsp honey
  • 1 tbsp rosemary
  • 1 large onion(s)
  • some salt and pepper
  • ½ cup crème fraîche
  • 2 tbsp milk

Combine flour, water, salt, and olive oil and knead into a smooth dough. Preheat the oven to 200°C (fan oven). Mix the crème fraîche with the milk and a pinch of salt. Season with herbs or pepper, if desired. Roll out the finished dough very thinly, prick it with a fork, and then pre-bake for 1-2 minutes. Meanwhile, heat the honey in a water bath until it becomes more liquid. Spread the cream over the tarte flambée, scatter the sliced ​​onion on top, crumble the goat cheese over it, and sprinkle with rosemary. Spread the now liquid honey evenly over the top and season with salt and pepper, if desired. Return the tarte flambée to the oven for another 7-10 minutes. Keep an eye on the tarte flambée at all times, as it browns very quickly.
