Ingredients for 2 servings:
- 2 chicken breasts
- 5 tbsp honey (leatherwood honey)
- 80 ml balsamic vinegar
- 50 ml olive oil
- 1 tsp garlic, dried
- 1 tsp, heaped chili paste, fermented
- 1 tsp thyme, dried
- 2 dashes fish sauce
- 12 cherry tomatoes
- 450 g beans, green, frozen
- 1 sweet potato(s) (approx. 500 g)
- 4 tbsp olive oil
Instructions
Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 50 minutes; Total time approx. 13 hours 5 minutes
For the marinade, combine the honey with balsamic vinegar, olive oil, chili paste, garlic, and thyme. Season with a little fish sauce. Marinate the chicken breasts in it, ideally overnight. Preheat the oven to 200 degrees Celsius (top/bottom heat). Dice the sweet potato and place it in a baking dish. Toss with 4 tablespoons of olive oil and bake in the oven for about 15 minutes. Halve the tomatoes and add them to the potatoes along with the beans. Add the meat and marinade to the vegetables and roast for about 30 minutes.
