Mediterranean swordfish

Ingredients for 2 servings:

  • 500 g swordfish
  • 10 black olives, pitted
  • 6 tbsp olive oil
  • 15 small vine tomatoes
  • 1 tsp garlic, freeze-dried
  • 1 tbsp onion(s), freeze-dried
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat the oven to 200°C. Cut the fish into bite-sized pieces. Halve the tomatoes and chop the olives. Place all ingredients in a baking dish and mix. Roast the fish in the oven for about 30 minutes.
