Ingredients for 2 servings:
- 300 g flour
- ½ tsp salt
- 200 ml water, approx., well lukewarm
- 1 stalk(s) leek
- Fat, for frying
- 200 g sour cream
- 100 g butter, melted, or sunflower oil, or both in equal parts
- Water, cold

Knead the flour, salt, and water into a smooth dough and let it rest for at least 15 minutes. For the filling, thoroughly wash the leek, cut it into thin rings, and sauté it in a little fat until soft. Season with salt and stir in the sour cream. Divide the dough into 12 pieces, shape them into rounds with your hands, and roll each one out with a little flour to approximately the size of a saucer. Brush 10 of these flatbreads with the melted butter and create two “towers” by stacking five flatbreads on top of each other. Place the flatbreads on top of each other without butter as a “lid.” Roll out the two towers to the size of the baking sheet (my Tepsi is about 40 cm in diameter) using a rolling pin, or better yet, a traditional rolling pin (it’s thinner, longer, and has no handles). Line the greased baking sheet with a sheet of dough. Spread the filling on top and cover with the second sheet of dough. Sprinkle with plenty of butter/oil. Bake at 250°C until golden brown. After baking, sprinkle with a little cold water (about 50 ml) immediately and cover with a cloth. Let it stand for a few minutes to soften. There are various recipes for Albanian pite. This is the Tetovar way of preparing it; unlike the Kosovars, for example, you don’t pull up the edges of the dough before filling it. I’ve also posted a slightly different recipe in the forum, but have adapted it over the years and this is the result. The pite is thinner and I usually only use 250 g of flour, or 1 kg of flour for four pite, and only divide the dough into 10-12 pieces for each pite, which is quicker and also gives me a better result.
