Thai cucumber salad with peanuts and chili

Ingredients for 4 servings:

  • 3 m.-large cucumber(s)
  • 2 tbsp white wine vinegar or rice vinegar
  • 2 tsp sugar
  • 2 tbsp chili sauce, e.g. sweet and hot
  • 1 onion(s), red
  • Coriander leaves, fresh
  • 100 g peanuts
  • 2 tbsp garlic
  • 1 tsp chili pepper(s), chopped
  • 1 tbsp fish sauce

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

great side dish to all Thai dishes

Peel the cucumbers, halve them, and scrape out the seeds with a small spoon. Slice the cucumber halves. Peel the onion and slice it into half rings, then add it to the cucumbers. Mix the vinegar and sugar well and pour it over the cucumbers and onions along with the chili sauce and coriander. Mix everything well and let it stand for about 45 minutes. Finely chop the garlic and roast it in a pan without any fat until golden brown. Then roughly chop the peanuts and roast them without any fat. Set aside. Just before serving, mix the peanuts, garlic, chili pepper, and fish sauce together and stir into the salad. Season to taste with more vinegar and chili sauce, if desired. Serve and enjoy!
