Thai cucumber salad

Ingredients for 4 servings:

  • 2 cucumbers
  • 6 tbsp soy sauce, light
  • 6 tbsp lime juice (2-3 limes)
  • 6 tbsp water
  • 4 tbsp brown sugar
  • 2 red chili peppers
  • 6 tbsp shallot(s), finely chopped
  • 1 bunch of coriander leaves
  • 3 tbsp peanuts

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Total time approx. 30 minutes

Great side dish to all Thai dishes

Peel the cucumbers, halve them lengthwise, and deseed them. Then slice them thinly. Mix the soy sauce, lime juice, water, and sugar until the sugar dissolves. Deseed the chilies, remove the white membranes, and slice them into thin rings. Add the chilies to the dressing along with the chopped coriander, shallots, peanuts, and cucumbers and let it simmer for at least 20 minutes. If you like it spicy, you can leave the chili seeds in.
