Thai cucumber salad

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 1 chili pepper(s), fresh, red
  • 2 shallots
  • 50 g sugar
  • 1 tsp salt
  • 100 ml vinegar (rice vinegar)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Quarter the cucumber lengthwise, remove the seeds, and cut into thin strips. Deseed the chili pepper and slice into thin rings. Slice the shallots into thin rings. Boil the vinegar, sugar, and salt until the sugar has dissolved. Let it cool, then pour it over the salad and let it stand for at least 15 minutes.
