Ingredients for 2 servings:

  • 400 g meat, poultry, beef, or pork
  • 1 bell pepper(s)
  • 1 onion(s)
  • 1 zucchini
  • 1 carrot(s)
  • 1 chili pepper(s)
  • 1 garlic clove(s)
  • 1 bag of soy sprouts
  • 3 kaffir lime leaves
  • 5 leaves of Thai basil
  • 1 bunch of coriander leaves
  • 1 can coconut milk, unsweetened
  • 2 tbsp red curry paste
  • some soy sauce
  • some salt
  • some pepper
  • some sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Chop all vegetables and meat into small pieces. Brown the meat and remove. Sauté the onion and garlic clove until translucent, add the remaining vegetables, cook briefly, and stir occasionally. Add the red curry paste to the vegetables and simmer for a few minutes. Then add the meat, stir in the coconut milk, add the lime and basil leaves, and bring back to a boil. Season with soy sauce, salt, pepper, and sugar. Chop the cilantro and add it with the bean sprouts; heat until hot. Serve with rice or noodles.
