Thai omelet with minced pork

Ingredients for 1 servings:

  • 2 eggs
  • 15 g minced pork
  • 1 small shallot(s) (Thai)
  • 1 tsp sauce (Golden Mountain seasoning sauce) or fish or soy sauce
  • 100 ml oil, possibly more

Crack the two eggs into a bowl and whisk with the seasoning sauce. Finely chop the small shallot and mix some of it with the minced meat. Then add the meat to the egg and stir. The key to a Thai omelet is how it is prepared. You can certainly use a frying pan, but to make an authentic omelet, use a small pot. The diameter should be around 20 cm. Heat at least 100 ml of oil in the pot. It is very important that the oil is really hot. Add the egg and minced meat to the hot oil. The egg will puff up immediately. Now fry for around 30 seconds on one side, then turn the omelet and fry the other side in the oil for 30 seconds as well. The omelet is served with fragrant Thai rice. If you can, get some Golden Mountain chili sauce and drizzle it on the omelet.
