Omelette with Thai filling

Ingredients for 4 servings:

  • 2 garlic cloves, chopped
  • 4 grains of black pepper
  • 4 sprigs of coriander
  • 2 tbsp oil
  • 200 g minced pork
  • 2 spring onions, chopped
  • 6 large eggs
  • 1 tbsp fish sauce
  • ¼ tsp turmeric
  • Mixed salad to serve

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely crush the garlic, peppercorns, and coriander in a mortar. Heat 1 tablespoon of oil in a wok over medium heat. Add the crushed spices and fry for 1-2 minutes until lightly colored. Add the minced meat and fry until light brown, stirring occasionally. Add the spring onions and tomatoes and fry for 1 minute. Remove the mixture from the heat. Heat the remaining oil in a pan. Beat the eggs with the fish sauce and turmeric. Pour a quarter of the mixture into the pan and form an omelet. Place a quarter of the meat mixture in the center of the omelet. Fold the omelet, keep warm, and make 3 more omelets. Divide the finished omelets among 4 plates and serve with mixed salad.
