Thai Soup and Shrimp Skewers

The perfect thai soup and shrimp skewers recipe with a picture and simple step-by-step instructions.

  • 3 Pc. Garlic cloves
  • 60 g Ginger
  • 2 Pc. Zucchini
  • 3 Pc. Carrots
  • 300 g French beans
  • 3 tbsp Olive oil
  • 750 ml Vegetable broth
  • 300 ml Coconut milk
  • 3 tsp Curry paste
  • 6 tsp Lemon juice
  • Salt and pepper
  • 25 Pc. King prawns
  1. Peel off the garlic cloves, peel the ginger and cut into small pieces. Wash the zucchini, peel the carrots and cut both into small pieces. Wash green beans, remove the stalks and boil for five minutes in salted water and then drain.
  2. Sauté vegetables, garlic and ginger in a saucepan with hot oil for about a minute. Add the stock and coconut milk. Stir in curry paste and bring to the boil.
  3. Wash the prawns (about 5 per person), devein and skewer in hot oil and fry with garlic in a pan. Serve with the soup.
