Ingredients for 2 servings:
- 2 pieces of chicken breast
- 3 tbsp soy sauce
- ½ pumpkin(s)
- 2 cm ginger, finely chopped
- 1 chili pepper(s), slit
- 1 onion(s), finely chopped
- 500 ml broth
- 400 ml coconut milk
- 3 tomatoes, chopped
- Salt
- pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Dice the chicken and marinate in 3 tablespoons of soy sauce. Meanwhile, peel and dice the pumpkin. Bring the broth to a boil and add the pumpkin cubes, onion, ginger, and chili pepper. Simmer for about 20 minutes. Purée half of this mixture. Continue cooking the unpureed mixture and add the chicken pieces, tomatoes, and coconut milk. Season with salt and pepper and add the puréed mixture. Cook until the chicken is tender.
