Ingredients for 6 servings:
- 125 g flour
- 1 tbsp baking powder
- 200 ml soy milk (soy drink)
- 600 g pumpkin flesh
- 600 g white cabbage
- 1 lemon(s)
- 200 g mushrooms
- salt and pepper
- oil

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour
vegan version
Peel the pumpkin, depending on the variety, then finely grate it. Grate the cabbage just as finely. Mix both together. Then dice the mushrooms and add them to the grated vegetables along with the baking powder and soy milk, and mix everything together. Season with salt, pepper, and the juice of the whole lemon. Pour the entire mixture into an oiled baking dish and bake at 180°C for 50 minutes until lightly browned.
