Ingredients for 5 servings:

  • 2 ½ goat cheeses (150 g each), with herbs or spicy
  • 1 pack of arugula, young
  • 1 pomegranate
  • 1 apple
  • some white wine
  • 6 tbsp raspberry vinegar
  • 6 tbsp olive oil
  • 3 tbsp mustard
  • 9 tsp honey
  • salt and pepper
  • 1 pack of puff pastry, rectangular, from the refrigerated section
  • 100 g sour cream
  • 50 g lean ham cubes
  • 50 g goat’s cheese, crumbled

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Roll out the puff pastry and spread about 50g of sour cream on one half. Season the sour cream with pepper and salt. Sprinkle the lean ham cubes and goat’s cheese on top. Fold the other, uncoated side onto the coated side and press the edges down slightly. Cut into strips about 1 1/2 finger-wide, twist them together, and press the ends down slightly to prevent the twist from coming undone. Bake these strips with the goat’s cheese. Quarter the round goat’s cheeses and bake on baking paper in a preheated oven at 180°C (convection oven) for about 15 minutes. Meanwhile, wash the arugula, remove the pomegranate seeds, and peel and slice the apple. Roast the apple pieces in a pan and deglaze with a little white wine. Now prepare the dressing. In a squeeze bottle, combine the raspberry vinegar, olive oil, mustard, and honey with pepper and salt. To serve, place the arugula on the plate, then arrange two-quarters of the goat cheese on top. Top with the warm apple pieces, pomegranate seeds, and dressing. Finally, add the puff pastry sticks.
