Vodka herring – what could be more delicious during a holiday feast? Red herring under a fur coat (classic recipe) – it’s a hearty and insanely delicious salad, which pleases the eye, heart, and demanding stomach of more than one generation of our people. And the coat with redfish is already a refined variation of the usual salad.
But when preparing this salad, most hostesses make the same mistake year after year – laying out the layers on the salad plate incorrectly. How to lay out the layers of herring under a fur coat, so that they complement each other and help to better disclose all the shades of flavor.
How to lay the layers of herring under a fur coat
The classic version provides that the first layer is the boiled potatoes – and already put herring on it. But we offer you a variant of the order of the layers, which gives a fresh, slightly pickled, slightly sweet taste to the salad:
- beets – it goes first,
- Onions on top – in combination with beets give the salad a spicy-sweet delicacy,
- Then the herring, which will give its juice to the onions and beets – and at the same time a little marinade under the top layers;
- to reduce the “degree of salt” – on top of the fish put potatoes,
- repeat the layer of onions,
- eggs,
- then peas,
- Then carrots,
- The layers are “looped” with a second layer of beets.
The mayonnaise is used to decorate the salad at the very end. For added zest, you can mix mayonnaise with a little mustard.
How long does it take to soak up Shuba salad?
A couple of hours is enough, but to be sure – it is worth leaving it in a cool place (in the refrigerator or put on the balcony) for 3 hours.
What kind of herring is better for herring shub?
Choosing fish for the salad, be guided by:
- size: the fish should be large;
- The integrity of the carcass: it must be intact;
- Tail: it should not be wrinkled (otherwise the herring is over-salted);
- Fat content: for the salad, it is worth choosing fatty specimens.
You can also try to press on the gills: if the light liquid came out, it means that you have herring of the right degree of salt.
What to put instead of herring under a fur coat
It is herring that is responsible for the classic taste of scuba. But if the need has arisen to replace the fish – then, in principle, you can take any other salted or smoked fish:
- trout,
- lightly salted salmon,
- humpback salmon,
- khamsa,
- mackerel.
Even experienced cooks recommend considering canned fish as a substitute for salted herring (just choose a fattier fish, and be sure to choose fish in oil, not in tomato). When preparing the salad, the oil itself from the canned fish should be drained in advance.
