Ingredients for 1 servings:

  • 200 g oat bran
  • 70 g mixed seeds (sunflower seeds, pumpkin seeds, etc.)
  • 50 g sweet lupin flour or almond flour
  • 50 g flaxseed meal
  • 3 tbsp psyllium husks, approx. 25 g
  • 1 packet of cream of tartar baking powder or regular baking powder
  • 250 g low-fat curd cheese
  • 3 eggs
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar or apple cider vinegar
  • 1 tsp salt
  • 2 tbsp water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 5 minutes

During my low-carb phases, I miss fresh bread the most. Because low-carb or protein breads taste more like bland cake to me, I came up with this recipe myself.

Combine the seeds and various flours with the cream of tartar. In another bowl, combine the quark with the eggs, oil, vinegar, water, and salt. Combine the quark mixture with the flour mixture and knead thoroughly. Form a loaf and bake in a small loaf pan or on a baking sheet. Bake the bread for 45–55 minutes at 180°C (convection oven).
