Thuringian Reiterfleisch on bread

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 50 g pepper(s), pickled
  • 3 gherkins
  • 2 m.-sized onion(s)
  • salt and pepper
  • Tomato paste
  • 1 cup ketchup
  • Paprika powder, sweet
  • 1 tbsp herbs, frozen, e.g. Italian herbs, garden herbs or similar
  • 2 tbsp sour cream
  • 4 slice(s) farmer’s bread, or dark mixed bread
  • some butter
  • some mustard
  • 4 eggs

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 25 minutes

Dice the bell peppers, gherkins, and onions and sauté in a little oil in a large pot. When the onions are translucent, add the minced meat and fry until crumbly. Add the tomato paste and sauté, then add the ketchup. Season with salt, paprika, and pepper, and add the herbs. Let everything simmer for 45 minutes. If the mixture is too thick, add 2-3 tablespoons of water. Stir in the sour cream before serving. Spread the bread slices with butter and mustard. Make fried eggs from the eggs. Spread the minced meat mixture on the bread slices (a little thicker is fine), place a fried egg on each slice, garnish with herbs, and serve.
