Ingredients for 4 servings:
- 4 tbsp oil
- 500 g minced beef
- 2 onions, chopped
- 2 clove(s) garlic, chopped
- 1 can of tomatoes, chopped
- 120 ml coffee
- 4 tbsp tomato paste
- 100 ml vegetable stock
- 3 tsp cayenne pepper
- ½ tsp oregano
- ½ tbsp cumin
- salt and pepper
- 1 can kidney beans
- ¼ tsp coriander, ground
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes
Heat the oil in a large pot and brown the minced meat along with the onions and garlic. Add the tomatoes, drain the kidney beans, and stir in. Add the remaining ingredients and simmer gently for about 90 minutes. Finally, season to taste with spices and cayenne pepper.
