Ingredients for 2 servings:

  • 2 chicken breast fillets, 175g each
  • 1 tbsp oil
  • 150 g pineapple
  • 100 g mango(s)
  • 2 tsp herb butter
  • 75 g cheese, Emmental
  • Salt
  • Pepper, from the mill
  • 2 slices of Ciabatta, 100g each

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Flatten the chicken breast fillets. Heat oil in a pan and fry each fillet for four minutes on each side. Set aside the peeled and thinly sliced ​​pineapple and mango. Halve the ciabatta bread lengthwise and spread a teaspoon of herb butter on each half. Arrange the chicken on the bottom half of the bread, top with pineapple and mango. Arrange 75g of sliced ​​Emmental cheese on top. Bake in a preheated oven at 210°C (200°C fan oven) on the second rack from the bottom for 7-8 minutes. Bake the top half at the same time and then place it on the toast.
