Tofu burger

Ingredients for 4 servings:

  • 500g tofu
  • 100 ml vegetable stock
  • 250 g corn (1 jar/can)
  • 250 g peas (cooked)
  • 100 g tomatoes, dried
  • 150 g grain, crushed or semolina
  • 3 tbsp soy flour (approx. 30 g)
  • salt and pepper
  • Garam Masala, or cumin

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours 55 minutes

vegetarian/vegan

Shred the tofu with a fork and marinate it in the vegetable broth for a few hours. I always do this overnight. Then strain out the remaining liquid. Mix in the corn, peas, and chopped tomatoes. Sprinkle the soy flour and ground corn over the tofu and mix in (the mixture is moist enough that the soy flour doesn’t need to be dissolved in water). Season to taste with salt, pepper, and garam masala or cumin. Form the mixture into 12 burgers and bake in the oven at 175°C for 30 to 40 minutes.
