Tofu-Miso-Soup

Ingredients for 4 servings:

  • 250g tofu
  • 1 liter of water
  • 1 spring onion(s)
  • 80 g broth (dashi granules)
  • 100 g spice paste (miso)
  • 1 tbsp wine (Mirin – sweet rice wine)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Main course soup

Cut the tofu into cubes. Slice the spring onion diagonally into 1 cm pieces. Combine the water and dashi in a saucepan and bring to a boil. Mix the miso and mirin in a bowl and add to the broth in the pot. Stir the soup over medium heat, but do not let it boil until the miso paste has dissolved. (Overheating will result in a loss of flavor.) Add the tofu cubes to the hot soup and heat over medium heat, stirring continuously. Garnish the bowl with the spring onions. Serve with fresh baguette or Turkish flatbread.
