Ingredients for 4 servings:
- 200 g mushrooms
- 2 spring onions
- 16 prawns, peeled
- 1 liter vegetable broth
- 3 tbsp lemon juice
- 1 tsp chili paste
- 3 tbsp fish sauce
- ½ lemon(s), the juice
- Coriander, fresh
- 1 stalk(s) lemongrass

Sour – Spicy Shrimp Soup
Bring vegetable stock to a boil in a saucepan. Halve the mushrooms, cut the spring onions into 2cm pieces, and wash and devein the shrimp. Combine the stock with the lemon juice, chili paste, fish sauce, and coriander. Add the mushrooms, spring onions, and shrimp to the stock and simmer until tender (about 10 minutes). Reduce heat and season with lime juice and chopped lemongrass.
