Tomato and bacon cake

Ingredients for 1 servings:

  • 250 g flour
  • 1 pinch of salt
  • 125 g butter, cold
  • 1 m.-sized egg(s)
  • 500 g tomatoes, sliced
  • salt and pepper
  • 150 g bacon cubes
  • 1 medium-sized onion(s), diced
  • 2 m.-sized eggs
  • 125 ml milk

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

For a 26 cm diameter tart or springform pan. Preheat oven to 200°C (top/bottom heat). Make a smooth batter from the flour, salt, butter, and egg and line a prepared tart or springform pan with it, creating a raised edge of about 2-3 cm. Bake in the preheated oven for 10 minutes. Spread the tomato slices on the base and season lightly with salt and pepper. Sprinkle with bacon and diced onion. Beat the eggs with the milk, season with salt and pepper, and pour over the pan. Bake at the same temperature for about 40 minutes.
