Tomato and mozzarella rolls

Ingredients for 1 servings:

  • 2 slices of wholemeal bread
  • 4 small tomatoes or 2 large ones
  • 1 pack of mozzarella
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar, red
  • 2 small onions, red
  • some dried herbs (oregano, thyme, basil)
  • some arugula leaves

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Drizzle the bread slices with olive oil (1 tablespoon per slice) and toast in the toaster for 4-5 minutes, depending on how crispy you like it. Then drizzle 1 tablespoon of balsamic vinegar on each slice. Thinly slice the onions. Thinly slice the mozzarella and tomatoes. Arrange the onions, mozzarella, and tomatoes on the bread slices in that order. Sprinkle everything with the seasoning. You can also use fresh herbs, if you like. Sprinkle the bread with a little salt. Top with arugula.
