Tomato and nut dip

Ingredients for 4 servings:

  • 500 g cocktail tomatoes
  • 350 g nuts or seeds (peanuts, sunflower seeds, walnuts)
  • 1 m.-sized onion(s)
  • 2 cloves garlic
  • 4 tbsp vinegar
  • 100 g tomato paste
  • 3 tbsp maple syrup
  • 80 ml olive oil
  • salt and pepper
  • e.g. chili powder

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Toast the nuts in a pan without oil and then chop finely. Finely chop the onion and sauté it in a pan with olive oil. Add the garlic, vinegar, tomato paste, and maple syrup and heat while stirring. Add the sliced ​​tomatoes and season with salt, pepper, and chili powder. Simmer for 10 minutes over low heat, then puree. Stir in the nuts and mix everything together. Finally, season with salt and pepper. Add a little more olive oil for the desired consistency. Pour the dip into small jars and store in the refrigerator. Tips: Feel free to vary the nuts; they all taste great. I like them chopped very finely so the spread is nice and creamy. Herbs give the dip a special kick. It’s not just delicious on bread, it’s also great with pasta. Health tips: These ingredients contain all the nutrients we need. Tomatoes, olive oil, nuts, garlic, and herbs leave nothing to be desired and are a good alternative to meat and sausage. We get essential fatty acids from oil and nuts. Nuts also contain protein.
