Tomato and spinach pasta

Ingredients for 4 servings:

  • 500 g shell pasta or similar pasta
  • 3 tbsp olive oil
  • 250 g baby spinach, remove the hard stems
  • 500 g cherry tomatoes, halved
  • e.g. salt and pepper
  • some Parmesan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the pasta in boiling salted water until al dente. Meanwhile, heat the oil in a pan and sauté the spinach and tomatoes for 2-3 minutes. Drain the pasta and add it to the vegetables. Season with salt and pepper, and sprinkle with Parmesan cheese, if desired.
