Ingredients for 6 servings:

  • 250 g butter
  • 1 onion(s)
  • 3 tomatoes
  • 1 garlic clove(s)
  • ¼ liter broth
  • 1 tbsp sugar
  • 1 small can of tomato paste
  • salt and pepper
  • olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Remove the butter from the refrigerator and let it soften at room temperature. Finely dice the onion and sauté in a little olive oil until translucent. Add the crushed garlic and diced tomatoes and season with sugar, salt, and pepper. Pour in the broth and simmer until reduced. Finally, add the tomato paste and season to taste. Purée the tomato mixture with a hand blender and let it cool. Then gradually add it to the softened butter. Mix well! Place the tomato butter in the refrigerator and let it cool. It tastes great with baguette, but also with hot pasta with Parmesan cheese!
