Tomato Clafoutis

Ingredients for 4 servings:

  • 80 g butter, liquid
  • 125 ml milk
  • 4 eggs
  • salt and pepper
  • 50 g Parmesan, grated
  • 100 g flour
  • 1 handful of basil, picked leaves
  • 400 g tomatoes, small
  • some butter for the mold

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 200°C. Stir the milk and eggs into the melted butter and season with salt and pepper. Then stir in the Parmesan cheese and flour, tablespoon at a time. Slice the basil leaves and stir them into the batter. Pour the batter into buttered, shallow, small, round baking dishes. Arrange the tomatoes, whole, halved, or quartered, on top of the batter, depending on their size. Bake on the middle rack with the fan assisted oven for about 15 minutes until light brown.
