Ingredients for 4 servings:

  • 1 pkt. puff pastry, rectangular
  • 2 tomatoes, sliced
  • 1 garlic clove(s)
  • 1 egg yolk
  • olive oil
  • salt and pepper
  • e.g. basil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Preheat the oven to 180°C (fan oven). Remove the puff pastry from the package and cut into evenly sized squares, large enough to fit a tomato slice. Spread these squares evenly on a baking sheet. Whisk the egg yolk in a cup and brush it onto the squares (e.g., using a rubber pastry brush). Place a tomato slice on each square and season with a little pepper. Bake for approximately 15-20 minutes. Meanwhile, dice the garlic clove and mix with the chopped basil leaves and olive oil. Remove the baked squares from the oven, sprinkle with a pinch of salt, and brush with the oil paste. Serve immediately or once cooled.
