Tomato – mozzarella – salad with mushrooms

Ingredients for 4 servings:

  • 4 m.-sized tomatoes
  • 500g mozzarella
  • 160 g mixed mushrooms
  • 4 tbsp balsamic vinegar
  • 5 tbsp olive oil
  • some salt and pepper, colorful from the mill
  • 1 tbsp basil, chopped
  • some basil leaves for garnishing

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the marinade, mix the vinegar with 4 tablespoons of olive oil and season with salt and pepper. Wash the tomatoes and remove the stems. Slice each of the tomatoes and mozzarella. Arrange them alternately, slightly overlapping, on plates and season with salt and pepper. Clean the mushrooms, chop them if necessary, and sauté them in a pan with the remaining olive oil. Season with salt and pepper and add the chopped basil. Arrange the mushrooms on top of the tomato and mozzarella salad. Drizzle with the marinade and garnish with basil leaves.
