with red onions and crème fraîche

First, wash the chops thoroughly, pat them dry, and then rub them well with the spices on both sides. Then, briefly sear the meat in a sufficiently large pan. Transfer the meat to a baking dish and set aside. Slice the onions and press the garlic. Briefly sauté the garlic in the unwashed pan and then deglaze with approximately 150 ml of red wine. Bring to a boil and add the stock. Pour this stock evenly over the chops and add the remaining red wine. Then cook at 180 degrees Celsius (top and bottom heat) for approximately 60 minutes. Finally, remove the chops and stir in the crème fraîche until the sauce is thick enough. Perfect with fries and rice.
