Ingredients for 1 servings:
- 1 ½ kg tomatoes, fresh, cut into pieces
- ½ kg onion(s), diced or sliced
- 3 garlic cloves, finely chopped
- 125 g raisins
- 375 ml vinegar (wine vinegar)
- ½ kg sugar
- ½ tbsp flour or cornstarch
- 3 tbsp mustard, hot
- 1 tbsp curry powder
- 1 tbsp chili pepper(s), crushed or coarsely ground
- 1 tsp turmeric
- 1 tsp ginger powder
- 1 tsp spice mix (garam masala)
- 2 tbsp salt

First, mix the tomatoes, onions, and garlic with the 2 tablespoons of salt and let stand overnight. Drain any remaining water before further preparation. Cover and simmer the tomatoes, onions, and garlic with the raisins, vinegar, and sugar for 45 minutes. Stir occasionally. Then, mix the flour or cornstarch with a little water until smooth and add the mixture. Add the mustard, curry powder, chili peppers, turmeric, garam masala, and ginger powder. Let the mixture simmer for another 15 minutes. Remove the lid to allow it to reduce slightly. Then pour the mixture into prepared jam jars and seal immediately. Refrigerate until ready to serve. The quantities given make 6-8 jam jars. Tip: Depending on your taste, you can also round it off with other Indian spices.
