Ingredients for 3 servings:
- 4 tomatoes
- 1 bunch of basil
- 4 spring onions
- 1 m.-large chili pepper(s), red
- 3 tbsp red wine vinegar
- 5 tbsp olive oil
- salt and pepper

as a summer side dish or salad
Wash the tomatoes and roughly chop them with the basil. Clean the spring onions and slice them into fine rings. Clean the chili pepper and chop them finely. Mix everything together with the vinegar and oil in a bowl (the tablespoon measurements are guidelines – the taste depends on the quality of the vinegar and oil as well as the ripeness of the tomatoes). Season to taste. Plate and serve. Tastes great with grilled chicken breasts, for example. In larger quantities, it is also delicious as a salad. The specified amount is intended as a side dish – as a salad, it is enough for two people with a small appetite. It is even tastier if it sits in the fridge overnight.
