Ingredients for 4 servings:
- 300 g mushrooms
- 100 g onion(s)
- 3 tbsp oil
- salt and pepper
- 1 tsp lemon juice
- 750 g tomatoes
- 300 g zucchini
- ½ bunch basil
- 4 tbsp balsamic vinegar
- 4 tbsp red wine
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
with zucchini and mushrooms
Slice the mushrooms and dice the onion. Heat 1 tablespoon of oil in a pan and sauté the mushrooms and onions. Season with salt, pepper, and lemon juice and let cool. Peel and eighth the tomatoes. Thinly slice the zucchini. Pick the basil leaves. Mix all ingredients. Mix together a marinade of balsamic vinegar, red wine, 3 tablespoons of water, salt, pepper, and the remaining oil and pour it over the salad.
