Ingredients for 6 servings:

  • 2 cup(s) millet, fine
  • 1 red bell pepper(s)
  • 4 spring onions
  • 3 onions
  • 4 tomatoes
  • 2 cups water
  • 2 tbsp tomato paste
  • Parsley
  • oil
  • lemon juice
  • salt and pepper
  • Paprika powder
  • e.g. cayenne pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel and chop the onions. Fry in oil until translucent, stir in the tomato paste and toast briefly, then add two large cups of water and bring to a boil. Remove the pan from the heat, stir in two large cups of millet, and let it swell for 10 minutes. Meanwhile, chop the spring onions, bell pepper, tomatoes, and parsley. Once the millet has swelled, stir in all the vegetables and season the salad with salt, pepper, paprika, and lemon juice. If you like, you can also spice the millet salad with cayenne pepper. Enjoy simply with a baguette or serve with grilled or roasted meat.
