Ingredients for 4 servings:

  • 600 g tomatoes, ripe, firm
  • 2 shallots
  • 4 tbsp balsamic vinegar, light
  • 6 tbsp olive oil
  • 1 tbsp water
  • 1 tbsp syrup (agave syrup)
  • 4 tbsp chives, finely chopped
  • 3 pinches of salt
  • Pepper, freshly ground

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Conjured up in a flash, very spicy

Wash the tomatoes, remove the stems, and slice them. Halve the slices and arrange them on a platter in a shingle pattern. Finely dice the shallots and scatter them over the tomatoes. Whisk all the dressing ingredients, except the chives, in a mixing bowl or electric mixer until thickened. Season to taste if desired. Spoon the dressing evenly over the tomato slices and sprinkle with the chives. Serve immediately.
