Ingredients for 4 servings:
- 50 g beans, white
- Salt
- 1 sprig(s) rosemary
- 1 sprig(s) of thyme
- 1 tbsp balsamic vinegar
- pepper
- 1 clove(s) garlic
- 6 tbsp oil (extra virgin olive oil)
- 8 tomatoes (San Marzano)
- 1 onion(s) (white onion), cut into rings
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Soak the beans in one liter of cold water the day before. The next day, drain the water and bring the beans to a boil with 5 dl of fresh water. Cover and continue simmering over low heat for about 45 minutes. 15 minutes before the end of the cooking time, add salt. Strip the rosemary needles from the sprigs and chop finely. Pick the thyme leaves. Mix the vinegar, salt, and pepper. Press in the garlic immediately. Add the herbs and oil and mix everything into a creamy vinaigrette. Slice the tomatoes and arrange on plates. Scatter the onion rings over the tomatoes. Drain the beans in a sieve and toss with the vinaigrette. Serve over the tomatoes. Tip: Instead of beans, you can use mozzarella or feta cubes. For feta cheese, you can choose between the Greek original with sheep’s cheese or feta made from cow’s milk.
