Tomato salad with red onion and elderflower syrup

Ingredients for 2 servings:

  • 400 g tomatoes
  • 1 onion(s), red
  • 2 sprigs of mint
  • 2 tbsp elderflower syrup
  • 2 tbsp fruit vinegar
  • 2 tbsp rapeseed oil
  • herbal salt
  • herb pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the tomatoes and remove the stems, then slice the flesh. Peel the onion and slice into rings. Wash the mint, pat it dry, and slice it into strips. For the dressing, combine the elderflower syrup, fruit vinegar, rapeseed oil, herb salt, and herb pepper. Mix the tomatoes with the dressing and arrange in a bowl. Arrange the onion rings on top and sprinkle with the mint. Finally, grind freshly with herb pepper. I make the tomato salad before I start cooking so it can sit for a while.
