Baked peppers with feta à la Michelle

Ingredients for 4 servings:

  • 4 bell peppers, red
  • 200 g feta cheese
  • ½ bunch parsley
  • 2 tbsp yogurt
  • 1 egg(s)
  • 4 tbsp olive oil
  • 1 tbsp lemon juice
  • pepper, black
  • oregano

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Preheat the oven to 220°C (top/bottom heat). Line a baking sheet with aluminum foil or use a baking dish. Halve the peppers lengthwise and remove the seeds. Finely crush the feta with a fork. Wash the parsley, shake dry, and chop the leaves. Mix the parsley, yogurt, and beaten egg into the shredded feta. Fill the pepper halves with the cheese mixture and place on the baking sheet or in the baking dish. Drizzle with lemon juice, sprinkle with pepper and oregano, and drizzle with oil. Bake in the center of the oven for 30 minutes. Serve warm with bread.
