Ingredients for 1 servings:

  • 3 kg tomatoes, fully ripe
  • 1 carrot(s)
  • 3 large onions
  • 6 garlic cloves
  • 2 tbsp sugar
  • 2 tbsp tomato paste
  • 2 chili peppers, dried, alternatively Pul Biber
  • 2 stalks of basil
  • 2 sprigs of rosemary
  • 6 sage leaves
  • 4 sprigs of thyme
  • 2 bay leaves
  • 5 grains of allspice
  • salt and pepper

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 2 hours; Total time approx. 3 hours

Basic sauce for pasta, pizza, soup, enough for about 15 servings

Peel the tomatoes, cut out the stems in wedges, and roughly dice them. Peel and dice the onions and garlic. Trim the carrots and also dice them into small cubes. In a large saucepan, lightly caramelize the sugar. Then briefly sauté the diced carrots and onions. Deglaze with the diced tomatoes. Add the diced garlic and tomato paste. I then put all the remaining ingredients in a large tea bag and tie it with a tie. I add this spice bag to the tomato sauce and let everything simmer over low heat for about 2 hours. Then I remove the spice bag and puree everything with a hand blender. Season to taste with salt and pepper. This basic sauce can be served on its own with pasta. It is also ideal as a base sauce for Bolognese or similar sauces. If you like, you can also season the sauce with a little oregano and use it as a pizza base. If strained through a sieve (to remove any uncrushed seeds), the sauce is also suitable as a soup base.
