Ingredients for 6 servings:
- 8 m.-large tomato(s)
- 2 packs of tomatoes, pureed
- 2 can/n tomatoes, chunky
- 2 onions
- 3 tbsp sugar
- ½ tube(s) tomato paste
- Basil, fresh
- salt and pepper
- Vegetable broth, granulated
- possibly chili flakes
- e.g. olive oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
simply heat it up and you have a quick pasta sauce
Wash and dice the tomatoes. Peel and dice the onions. Heat a little olive oil in a pan and sauté the onions until translucent. Do not let them brown! Then add the sugar and let it caramelize slightly. Then add the tomato paste. Now add the pureed and chopped tomatoes. Season everything with salt, pepper, chili flakes if desired, and vegetable stock. Simmer for about 20 minutes, then season again to taste and adjust the seasoning if necessary. Finally, tear the basil leaves into small pieces and add them as well. I always fill the hot tomato sauce into twist-off jars, quickly seal them, and let them cool upside down. The sauce is great as a pasta and pizza sauce. You can also add it to the casserole dish with stuffed peppers, for example. Tip: If you don’t like the chunks in the sauce, you can strain the sauce before filling.
