Ingredients for 3 servings:
- 1 ½ kg tomatoes, ripe
- ½ onion(s)
- oil
- salt and pepper
- 3 eggs

Finely dice the onion, add it to a pan, and sauté in oil. Finely chop the tomatoes, leaving the skin on. Add the chopped tomatoes to the pan and sauté. Stir occasionally and crush any larger pieces. The tomatoes should cook thoroughly. Season with salt and pepper. Crack the eggs into a bowl and whisk. Then add them directly to the pan and stir well. Reduce heat to low to medium to allow the eggs to set, stirring occasionally. Serve warm. Serve with bread of your choice, drizzle with butter, and top with the scrambled tomato eggs.
