Ingredients for 4 servings:

  • 1 kg zucchini
  • 2 tomatoes
  • 4 eggs
  • 4 tbsp cheese, grated
  • butter
  • salt and pepper
  • Parsley, chopped or dill

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Vegetarian

Roughly dice the washed zucchini, peel the tomatoes, and cut them into chunks. Heat the butter and add the zucchini and tomatoes, along with the parsley or dill. Season with salt and pepper. Cover and cook, stirring occasionally. Then stir in the beaten eggs, sprinkle with cheese, and let the eggs set, covered, for about 4 minutes. Serve immediately!
