Tomato skewers with marinated mozzarella

Ingredients for 20 servings:

  • 10 black olives, pitted
  • 1 garlic clove(s)
  • 1 tsp peppercorns, black
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt
  • 20 balls of mozzarella, mini balls
  • 1 bunch of basil
  • 40 cocktail tomatoes

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Total time approx. 55 minutes

Finger food

Finely chop the olives and garlic clove. Crush the peppercorns in a mortar or chop them with a knife. Mix the olives, garlic, lemon juice, olive oil, cracked pepper, and a good pinch of salt. Marinate the mozzarella in the mixture for about 30 minutes. Wash the basil and pat dry. Cut half into strips. Set aside 20 large leaves. Sprinkle the mozzarella balls with the chopped basil and thread them onto skewers, alternating with the tomatoes. Decorate the top of each skewer with a basil leaf.
