Tomato soup with fried onions and bread cubes

Ingredients for 2 servings:

  • 1 small can of tomatoes
  • 2 cloves garlic
  • ½ onion(s)
  • 1 tbsp tomato paste
  • 1 tsp rapeseed oil
  • 1 pinch(s) of sugar
  • oregano
  • salt and pepper
  • chili
  • 2 tbsp cream
  • 1 m.-sized onion(s)
  • 1 tsp rapeseed oil
  • slice(s) of bread(s) (wholemeal loaf, toast or white bread), medium-sized
  • 1 tsp rapeseed oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

For the fried onions, peel the whole onion and slice into rings, then fry in 1 teaspoon of oil until golden brown. For the bread cubes, cut the bread into equal-sized cubes and fry in 1 teaspoon of oil. For the soup, peel and chop one onion, then peel and chop the garlic. Sauté both in oil and briefly fry the tomato paste. Add the canned tomatoes and let the soup simmer. Purée the soup and season with sugar, oregano, salt, pepper, chili, and cream, then simmer briefly. Serve with the fried onions and bread cubes.
