Tomato Soup with gin Cream

Ingredients
 

  • 4 Stalk Spring onion
  • 4 Stalk Chilli pepper
  • 4 Stalk Olive oil
  • 1 Can Peeled and diced tomatoes
  • 300 ml Vegetable broth
  • 4 piece Dried tomatoes
  • Sugar
  • Cream
  • 1 tbsp Gin

Instructions
 

  • Clean the spring onions and put some of the light green part back for the garnish, cut the rest into fine rolls. Core the chilli, also cut out the partitions, then dice finely (the soup should not be too hot).
  • Heat the olive oil and briefly sweat the onions together with the chilli. Then add the tomatoes, the vegetable stock and the dried tomatoes, season well with a little salt and sugar and bring to the boil. Let simmer gently for about 10 minutes. Now puree the whole thing finely and, if necessary, season again and let it steep with the lid closed.
  • In the meantime, finely chop the green part of the spring onion that was put back.
  • Whip the cream very stiffly and then carefully fold in the gin.
  • Put the finished soup in a soup cup, garnish with the gin cream and the spring onions and ..... enjoy your meal .....
