Ingredients for 4 servings:
- 3 large tomatoes (750 g)
- 2 tbsp olive oil
- 1 onion(s), finely chopped
- 1 garlic clove(s), crushed
- 1 small red bell pepper(s), finely chopped
- 1 liter vegetable broth
- 3 tbsp tomato paste
- salt and pepper
- 1 tsp sugar
- 1 ½ tsp basil, dried or 7 fresh leaves
- 150 g noodles (soup noodles of your choice)
- possibly sour cream
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Peel the tomatoes and roughly chop the meat. Heat the oil. Sauté the onion, garlic, and bell pepper for 10 minutes, stirring occasionally, until softened. Add the tomatoes and cook for another 10 minutes. Add the broth, tomato paste, salt, pepper, and sugar. Cover and cook for 15 minutes. Remove from the heat and add the basil. Let cool. Process in a food processor until smooth. Return to the pan and heat gently. Serve with the cooked pasta. Also delicious with an extra dollop of sour cream.
