Ingredients for 4 servings:

  • 500 g spirelli or other pasta
  • 1 large carrot(s)
  • 1 small piece(s) of celeriac
  • 500 g tomatoes, pureed
  • 3 tbsp olive oil
  • pinch(s) sugar
  • e.g. salt and pepper
  • e.g. chili flakes
  • e.g. Parmesan

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

quick and tasty

First, peel the celeriac and carrot, then dice them as small as possible. Then, add the vegetables to a hot pan with the olive oil. The vegetables should be just slightly submerged in the oil. Now, sweat the celery and carrot in the oil at low heat until the pieces are soft. Once this point is reached, deglaze the vegetables with the passata. While the tomato sauce comes back up to temperature and begins to simmer gently, cook the pasta. During the cooking time, season the sauce with salt, pepper, and a little sugar. If, like us, you like it a little spicier, you can add a few chili flakes. Once the pasta is drained and the sauce is seasoned, toss the pasta with the sauce. The pasta combines wonderfully with the sauce, and the soft vegetables give the sauce a dreamy consistency. Sprinkle a little Parmesan cheese on top. This recipe may sound unspectacular at first, but the result has that certain something and tastes simply fantastic.
